Travels with Guacamole

Aztecs, Texans, and Californians

Read by Michael Flamel

Once upon a time, in the flavorful tapestry of culinary history, there existed a dish that transcended boundaries and captured the hearts of food enthusiasts across the globe—guacamole. Its journey to perfection involved a melange of influences, and it found its true home in the vibrant and diverse landscapes of the American Southwest, particularly in Texas and California.

Legend has it that guacamole traces its roots to the ancient Aztecs, who hailed from the region that is now Mexico. The word “guacamole” itself is a delightful linguistic dance, combining the Aztec words for avocado (“ahuacatl”) and sauce (“molli”). From its humble beginnings, this creamy concoction of mashed avocados evolved over centuries, absorbing flavors and techniques along the way.

As it embarked on its journey through time and space, guacamole encountered diverse palates in the American Southwest. In Texas, where everything is famously bigger, guacamole took on bold and robust flavors. It embraced the Tex-Mex spirit with the addition of spicy serrano peppers, chunky tomatoes, and a generous squeeze of lime. This Texan twist gave guacamole a fiery kick that resonated with those who craved a bit of heat in every bite.

Meanwhile, in the sun-soaked orchards of California, guacamole found a different muse. The Golden State’s version of this green delight celebrated simplicity and the freshest of ingredients. Creamy avocados were paired with juicy, ripe tomatoes, finely chopped red onions, cilantro, and a hint of garlic. This California dream of guacamole showcased the natural beauty of each ingredient, creating a medley of flavors that danced on the taste buds.

Now, let me share with you my father’s spicy and intricate guacamole recipe that has stood the test of time. This California-inspired rendition pays homage to the roots of guacamole while adding a dash of heat to the mix.
